🍗 Ingredients
• 2 bags Shirataki noodles (Tofu or Miracle Noodle Spaghetti style, about 448 g total)
• 8 oz (224 g) boneless, skinless chicken breast, sliced thin
• 1 tbsp olive oil or avocado oil
• 1 tsp garlic, minced
• 1 tsp ginger paste (or 1/2 tsp powdered ginger)
Sauce:
• 45 g low-sodium soy sauce (3 tbsp)
• 15 g chili garlic sauce (1 tbsp, adjust for heat)
• 10 g white rice vinegar (2 tsp)
• 35 g water (about 2 tbsp)
Optional Add-ins:
• 1/2 cup mixed vegetables (bell peppers, snow peas, or carrots)
• Green onions or sesame seeds for garnish
🔥 Instructions
1. Prepare noodles:
Drain and rinse Shirataki noodles thoroughly under cold water for 1–2 minutes.
Place them in a hot dry pan for 3–4 minutes to remove excess moisture. Set aside.
2. Cook chicken:
In a large skillet, heat olive oil over medium-high heat. Add sliced chicken and cook until golden and no longer pink (about 6–7 minutes). Remove and set aside.
3. Mix sauce:
In a small bowl, whisk together soy sauce, chili garlic sauce, rice vinegar, water, garlic, and ginger paste.
4. Combine:
Add noodles back to the skillet. Pour in the sauce and toss well for 2 minutes. Add the cooked chicken back in and stir-fry until everything is coated and the sauce thickens slightly (3–4 minutes).
5. Finish & serve:
Garnish with green onions or sesame seeds if desired. Serve hot.
